1/2 inch Freshly Grated Ginger

2 Cups Chopped Carrot
1 Cup Chopped Sweet Potato
Water
Salt to taste
1 tsp Ghee
3-4 Chopped Garlic Cloves
1 Sliced Onion
Pinch of Asafoetida
2 tbsp Coconut Milk
Crushed Black Pepper

Heat 2 tbsp of Ghee in a pot over medium heat.

Add 1/2 tsp of Cumin Seeds, 1/2 tsp of Coriander Seeds, 2 Green Chillies, and 1/2 inch of Freshly Grated Ginger to the pot.

Mix for a few seconds until the seeds start to crackle.

Add 1/4 tsp of Turmeric Powder to the pot.

Add 2 Cups of Chopped Carrot and 1 Cup of Chopped Sweet Potato to the pot along with some Water.

Stir the mixture well and add Salt to taste.

Cover the pot and let it cook for about 15-20 minutes until the veggies are soft and tender.

In a small pan, heat 1 tsp of Ghee for the tempering.

Add 3-4 Chopped Garlic Cloves and 1 Sliced Onion to the pan and sauté until translucent.

Add a pinch of Asafoetida to the sautéed mixture.

Add the tempering to the Carrot and Sweet Potato mixture and mix well.

Add 2 tbsp of Coconut Milk to the mixture for a creamy finish.

Blend everything to a smooth and velvety soup.

Pour the blended soup back into the pot and adjust the consistency with Water if needed.

Let the soup simmer for about 2-3 minutes.

Season the soup with some crushed Black Pepper.
