Season the chuck roast with salt, black pepper, and garlic, rubbing it in well on all sides.
Let the seasoned roast rest in the refrigerator for about 15 minutes.
Heat bacon grease in a cast iron skillet and add butter to prevent burning.
Sear the roast in the skillet until browned on all sides, about 3-4 minutes per side, ensuring it is seared on the edges as well.
Remove the roast from the skillet and set it aside.
In a bowl, mix beef broth and red cooking wine in equal amounts to create a sauce.
Add brown gravy mix and slow cooker beef stew seasoning to the sauce mixture and stir well.
Pour the sauce over the seared roast in a pot, ensuring it is well coated.
Season the chopped potatoes, celery, and carrots with butter, salt, and pepper.
Arrange the seasoned vegetables around the roast in the pot.
Cover and cook the roast for about 3 to 4 hours, checking for tenderness. Adjust cooking time based on the size of the roast.
