Ground turkey is leaner, while ground pork is often less expensive.
Add 1/4 cup water, 1/4 cup milk, and 23 grams bread flour to a medium pot for tangzhong.
Cook over medium heat, whisking constantly until thick, about one minute. Let cool completely.
In a mixing bowl, combine 440 grams bread flour, 50 grams sugar, and 80 grams instant yeast. Mix lightly.
Add 18 grams salt, 1 beaten egg, 1 egg yolk, 3/4 cup milk, and the cooled tangzhong to the bowl.
Cube 60 grams butter and add gradually to the mixture until incorporated.
Mix on low speed until the dough forms, then increase to medium speed until it pulls away from the bowl.
Transfer the dough to an oiled bowl, cover with plastic wrap, and let proof for 1 hour or until doubled in size.
Press the dough to remove air, then place on a floured surface and cut into 8-9 equal pieces (95-100 grams each).
Shape each piece into a ball and place on a baking tray lined with parchment paper. Let prove for 45 minutes to 1 hour.
Prepare egg wash with 1 egg and 1 teaspoon milk, brush over the buns.
Bake the buns for 20 minutes until golden brown. Brush with melted butter after baking.
For the classic burger sauce, mix 2 tablespoons mayonnaise, 1 teaspoon ketchup, 1/2 teaspoon dijon mustard, 1/4 teaspoon garlic powder, 1/2 teaspoon worcestershire sauce, 1 teaspoon caramelized onions, and 1 teaspoon diced pickles in a bowl.
To caramelize onions, cook 1 medium onion with 2 tablespoons olive oil, salt, and pepper in a pan over high heat until sweating, then lower heat and cook until brown.
For truffle mayo, combine 4 tablespoons mayonnaise, 1 teaspoon truffle oil, and 1 teaspoon truffle sauce in a bowl.
Mix ground sirloin, short rib, and brisket to make beef patties around 150 grams each. Season with salt and pepper.
Remove patties from the fridge 30 minutes before cooking. Grill patties over medium to high heat, cooking for 3-4 minutes per side without touching them.
Brush patties with butter, turn them over, and add cheese on top.
Toast buns on the grill with oil, and grill onion rings until charred.
Assemble the classic burger with burger mayo on both sides of the bun, lettuce, tomato, grilled onion, and the beef patty.
For the truffle burger, use truffle mayo, caramelized onions, and cheese. Press down the patties while cooking in a saucepan.
Layer the truffle burger with mayo, beef patty, and additional caramelized onions.
