Dice the beef steak into bite-sized pieces.
Season the beef with salt, black pepper, and thyme.
Heat butter in a large skillet over medium heat until melted.
Add the diced beef and brown on all sides, about 5-7 minutes.
Remove the beef and set aside; in the same skillet, add chopped onions and carrots.
Sauté the onions and carrots until softened, about 4-5 minutes.
Sprinkle flour over the vegetables and stir to coat, cooking for 1-2 minutes.
Gradually add beef broth, stirring constantly until the mixture thickens.
Return the beef to the skillet, add bay leaves, and simmer for 15 minutes.
Peel and dice the potatoes, then boil in salted water until tender, about 10-15 minutes.
Drain the potatoes and mash them with a little butter and salt.
Roll out the pastry dough and line a pie dish with it.
Fill the pastry with the beef and vegetable mixture, then top with mashed potatoes.
Cover with a layer of pastry, sealing the edges with a fork, and cut slits for steam.
Brush the top with beaten egg for a golden finish.
Bake in the preheated oven for 30-35 minutes, until the pastry is golden brown.
