Greek yogurt reduces calories while maintaining creaminess

Preheat the oven to 350°F.

Brown 1 pound of lean beef in a 13-inch Carolina cooker skillet and drain it.

Mix taco seasoning into the browned beef.

Combine 1 egg with 15 ounces of ricotta cheese.

Layer the ingredients in a 12 by 8.5 inch Carolina cooker enameled pan: start with a layer of noodles, then a layer of ricotta cheese, followed by a layer of salsa, a layer of the beef mixture, and a layer of cheese.

Repeat the layering process three times.

Top off with additional cheese, as desired.

Bake in the preheated oven for about 40 minutes.

Garnish with green onions and sour cream before serving.
