Pour 1 cup of warm milk into a bowl.
Add 1 packet of instant yeast and 3 tablespoons of sugar to the milk and whisk until smooth.
Let the mixture sit for 20 minutes until frothy.
In a separate bowl, lightly beat 2 eggs with a fork until combined and add to the milk mixture.
Add 3 oz of melted butter and 1 teaspoon of salt to the mixture and whisk thoroughly.
Add 2 teaspoons of vanilla and sift in 4 cups of flour, mixing with a whisk until it becomes heavy.
Switch to kneading by hand when the dough becomes heavy; add more flour if it sticks, but keep the dough soft.
Cover the bowl with plastic wrap or a towel and let it rise in a warm place for 1 to 1.5 hours until it increases in volume by at least 2.5 times.
Lightly knead the dough to release excess carbon dioxide after it has risen.
Roll the dough out into a large rectangular sheet, about 1/4 inch thick.
Grease the whole sheet with room temperature soft butter.
In a separate bowl, mix 1/2 cup of sugar and 3-4 tablespoons of cinnamon for the filling.
Evenly sprinkle the sugar-cinnamon mixture over the buttered dough, leaving a 1 inch clean edge.
Run a rolling pin lightly over the filling to press it into the dough.
Roll the dough into a tight log and slice it into pieces 2 inches wide.
Place the buns in a baking dish, leaving space between them, and cover with a towel to let them rise for another 15-20 minutes.
Brush the rolls with a beaten egg for a glossy shine and sprinkle with coarse decorative sugar if desired.
Bake in a preheated oven at 350°F (180°C) for about 30 minutes, watching for a golden-brown crust.
