Soak the glass noodles in water and set aside.

Slice the Chinese cabbage into small pieces, slicing the stem area thinly and the leaves into larger pieces.

Stir fry the cabbage with oil to eliminate the raw smell and reduce water content, then set aside to cool.

Slice the chives into small pieces, removing any hard parts.

Slice the soaked glass noodles into smaller pieces.

In a large bowl, combine the minced chicken with soy sauce, oyster sauce, fish sauce, chicken powder, mushroom powder or MSG, sugar, pepper, sesame oil, ginger extract, and cornstarch. Mix well.

Add the stir-fried cabbage, chives, and glass noodles to the chicken mixture and stir until well combined.

Wrap the filling in the skin, using various techniques: brush edges with water, add about 1 tbsp filling, fold and pinch to seal, or use simpler folding methods.

Steam the Guotie for 7-8 minutes using a Tefal Convenient Food Steamer.

Pan-fry some Guotie in a nonstick pan, adding water to cook evenly and oil to crisp the bottom once the water reduces.
