Mongolian Beef

Cultural Context

Mongolian Beef, despite its name, is a dish popularized in American Chinese cuisine rather than originating from Mongolia. It features tender beef stir-fried with a sweet and savory sauce, often enjoyed in restaurants. The dish reflects the adaptability of Asian flavors in Western cooking, with variations found in many Chinese restaurants across the globe.

MNMNmain
4 servings
Servings4
1 lb beef flank steak
2 tablespoons cornstarch
1/2 cup soy sauce
2 tablespoons sesame oil
1/4 cup brown sugar
4 green onions
1 tablespoon ginger
2 cloves garlic
1 teaspoon red pepper flakes
1/2 cup water

Quantities are estimated based on standard recipes for your convenience. The actual ingredients used in this video are accurate.

1

Cut spring onion into small rough chunks for flavoring the sauce.

2

Chop ginger into nice chunks to flavor the sauce heavily.

3

Crush garlic cloves and keep them in large pieces to flavor the sauce.

4

Cut beef (sirloin) into large dice, removing any big bits of fat.

5

Prepare a marinade with light soy sauce, sesame oil, and brown sugar for the beef.

6

Add 3 teaspoons of cornflour to the beef and mix well to coat.

7

Ideally, marinate the beef overnight in the fridge for better flavor.

8

Heat oil in a wok and blanch the beef for about 1 minute until it has a slight crisp edge.

9

Remove excess oil from the wok, leaving enough for cooking the sauce.

10

Add ginger, garlic, and whole dry red chilies to the wok and stir-fry on high heat.

11

Pour in light soy sauce and a couple of tablespoons of brown sugar, allowing it to bubble.

12

Add chicken stock to the wok to keep the sauce going and let it reduce down.

13

Wait for the sugar to start caramelizing and the sauce to reach a dripping consistency.

14

Return the blanched beef to the wok and stir to coat it in the sauce.

15

Serve immediately once the beef is well coated and the sauce is caramelized.
