White Chicken Chili

2 pounds chicken, cubed
1 teaspoon oregano
1 teaspoon cumin
1 teaspoon black pepper
1 teaspoon kosher salt
1 teaspoon chicken seasoning
1 tablespoon minced garlic
1/4 teaspoon cayenne pepper
1/4 teaspoon white pepper
1 green bell pepper, rough chopped
1 jalapeno, seeded and rough chopped
6 celery stalks, rough sliced
1 yellow onion, rough chopped
3 limes, juiced
3 cans great northern beans
3/4 cup chicken stock
1 regular lager beer
16 ounces sour cream

Cube 2 pounds of chicken and place it in a bowl.

Add 1 teaspoon of oregano and cumin, 1 teaspoon of black pepper, 1 teaspoon of kosher salt, 1 teaspoon of chicken seasoning, 1 tablespoon of minced garlic, 1/4 teaspoon of cayenne pepper, and 1/4 teaspoon of white pepper to the chicken.

Mix the spices into the chicken until well combined.

Transfer the seasoned chicken to the crock pot.

Rough chop 1 green bell pepper and 1 seeded jalapeno, then add them to the crock pot.

Rough slice 6 celery stalks and add them to the crock pot.

Rough chop 1 yellow onion and add it to the crock pot.

Juice 3 limes and add the juice to the crock pot.

Add 3 cans of great northern beans to the crock pot.

Pour in 3/4 cup of chicken stock and 1 regular lager beer into the crock pot.

Add 16 ounces of sour cream to the mixture in the crock pot.

Set the crock pot to low and cook for about 24 hours.

Check on the chili throughout the day to ensure there is enough liquid, adding water if necessary, about a quarter cup at a time.

After 11-23 hours, check the consistency of the chili and adjust thickness if desired by adding heavy cream instead of beer.
