Chop one medium onion.
Set a large non-stick skillet over medium high heat.
Add ground beef to the hot skillet and break it up while cooking.
Once the beef is cooked through and releases oil, keep about 2-3 tablespoons of oil in the pan.
Add the chopped onions and seasonings: cumin, paprika, chili powder, and salt.
Saute for 3-4 minutes until the onions are softened and the beef is nicely browned.
Add the can of Rotel tomatoes with green chilies and the can of beans with their juice to the skillet.
Reduce the heat to medium low and stir occasionally until the tomatoes break down and the liquid has mostly evaporated (8-10 minutes).
Turn off the heat and season with salt and pepper to taste.
Let the beef mixture cool slightly before filling the burritos.
Lay out large flour tortillas on your work surface.
Sprinkle half of the cheese on the tortillas.
Add 2/3 cup of the meat mixture on top of the cheese, then sprinkle the remaining cheese on top.
Fold the short sides of the tortilla over the filling, then fold the bottom tightly over the filling, tucking it inside.
Fold in the corners and tightly roll away from you until the burrito is sealed.
Repeat the process with the remaining tortillas to make six large beef burritos.
You can either saute them right away or wrap them in parchment paper or foil and refrigerate for a few days or freeze for up to three months.
If freezing, transfer to a freezer-safe zip lock bag to prevent freezer burn.
When ready to enjoy, thaw in the fridge overnight.
Set a skillet over medium heat, add a little oil, and saute the burritos for a couple of minutes per side until golden brown and crisp all over.
Ensure the center is nice and hot and cheesy by reducing the heat if they are browning too quickly.
Serve with toppings like guacamole, salsa, sour cream, and cilantro.
