Prep the lobster by removing the anus and roughly chop the lobster meat.
Chop garlic and scallion, then cook them in ghee (or regular butter) for about 3 minutes.
Add chopped lobster meat and parsley to a mixing bowl.
In the bowl, add half a cup of Japanese mayonnaise, one tablespoon of Asian mustard, and one egg. Mix well.
If the mixture is too wet, add about one and a half cups of panko breadcrumbs to absorb moisture.
Refrigerate the mixture for 30 minutes to 3 hours to firm up.
Form the lobster mixture into discs and coat them in panko breadcrumbs.
Toast an English muffin with a little butter.
In a saucepan, melt a quarter cup of unsalted butter and add four egg yolks and one tablespoon of lemon juice.
Add one tablespoon of miso paste and some pepper to the egg yolk mixture.
Whisk while adding the melted butter slowly to avoid cooking the yolks or breaking the sauce.
Create a vortex in the mixture and add the egg yolk in the center to ensure even cooking.
