Turkey is leaner and lower in fat, while beef tripe is often less expensive.

Sit at the sink to clean chitterlings (chitlins).

Take a 5 lb bag of Aunt Betsy's Chitlins, noting that this brand has less body waste and fat.

Place the chitlins bag inside another bag to hold fat and waste during cleaning.

If chitlins are frozen, thaw them for a couple of days before cleaning.

Prepare cool or cold water for cleaning the chitlins, ensuring it's not too cold to touch.

Open the bag of chitlins and cut the pouch open using kitchen shears to access the insides.

Identify the rough side and smooth side of the chitlin; the smooth side is where intestines are joined.

Separate the skin membrane from the chitlin starting at the edge, not the center.

Clean the chitlins thoroughly, as there is no such thing as pre-cleaned chitlins.
