Make a batch of biscuits using 2 cups of all-purpose flour, 1 tbsp of baking powder, 1 tsp of baking soda, 1 tsp of salt, and 1 stick of cold butter.
Grate the cold butter into the dry ingredients and mix with hands until combined.
Add 1 cup of cold milk and stir until a dough forms.
Roll out the dough to about 8-10 inches in diameter and set aside.
Dice half of a yellow onion and chop a jalapeno and a pablano pepper.
Cut half a pound of thick cut bacon into bite-sized pieces.
Crack 12 eggs into a bowl, add 1/2 cup of half and half, a pinch of salt, and a pinch of black pepper, then whisk until combined.
Brown the bacon and 1 lb of ground breakfast sausage in a skillet, breaking it up as it cooks.
Add the diced onion and chopped peppers to the skillet when the sausage is halfway browned and cook until softened.
In a 10-inch Dutch oven, smear with butter and press the biscuit dough into the bottom.
Layer half of the meat and pepper mixture over the biscuit base, followed by 1 cup of shredded cheddar jack cheese, then 2 cups of shredded hash browns.
Pour the egg mixture over the layers, then add the remaining meat mixture and another cup of cheese on top.
Add more hash browns and top with additional cheese before covering with a lid and placing over the fire.
