Seleccionar tallarines de arroz y salsa de pescado.
Comprar anís estrellado, canela, clavo, brotes de soja, chiles rojos, cebolla roja, cebolla blanca, albahaca, hierbabuena, cilantro, cebollino, jengibre y limas.
Precalentar el horno a 200-220 grados.
Colocar los huesos en una bandeja de horno cubierta con papel de aluminio, con el tuétano hacia arriba, y rociar con aceite de girasol.
Hornear los huesos durante 30 minutos.
Cortar dos cebollas blancas y dos trozos de jengibre por la mitad, sin pelar, y añadir a la bandeja con un poco más de aceite de girasol.
Sacar los huesos del horno y añadir las verduras, luego volver a hornear por 30 minutos más.
Colocar los huesos en una olla grande y cubrir con agua, llevar a ebullición y hervir durante 2 horas.
Colar el caldo y añadir clavos, anís estrellado, canela, azúcar moreno y salsa de pescado al caldo.
Añadir glutamato monosódico al caldo y rectificar con más agua, hervir por 1 hora más.
Hervir agua en una olla mediana y añadir los tallarines de arroz, cocinando por 3-4 minutos.
Pelar y picar dos dientes de ajo y chiles en rodajas finas.
Mezclar ajo y chiles en un frasco con vinagre de arroz.
Picar jengibre en rodajas finas y luego en bastones.
Picar hierbabuena y cilantro.
Colar el caldo una última vez y rectificar con agua.
