Put brisket beef and pieces of oxtail in a large pot.
Add 6L of water and 1 tbsp of salt, and 7 tbsp of fish sauce.
Heat on high heat with a lid on.
Watch for scum on the surface and remove it before boiling to keep the broth clear.
Cut ginger into slices and peel two onions.
Regularly remove scum and fat from the surface.
When the broth begins to boil, add the onions, ginger, and spices.
Let simmer over low heat for three and a half hours with the lid open to ¼.
Keep skimming from time to time.
Meanwhile, mince the rump steak into thin slices and keep it in the fridge.
Finely mince the onion, chop the chives and coriander, and cut the fresh hot peppers into small pieces.
Cut the lemon into wedges.
At the end of three hours, remove the brisket and let the oxtail cook for another thirty minutes with the lid on.
Mince the brisket into thin slices after it cools down.
After three and a half hours of cooking, add the beef balls and leave on low heat.
Boil some water in another saucepan.
When the water boils, put a portion of rice pasta (about 150g) in a strainer and soak them in boiling water for 15 seconds.
Drain the rice pasta and put it immediately in the serving bowl.
Put the slices of brisket and rump steak over the pasta.
Pour boiling broth into the bowl and add a piece of oxtail and some beef balls.
Sprinkle with minced herbs and onion.
Each guest can add bean sprouts, lemon juice, hot chilies, and more herbs as desired.
