Phở Bò, originating from the northern regions of Vietnam, is a beloved noodle soup that showcases the country's culinary artistry. Traditionally enjoyed for breakfast, it symbolizes warmth and comfort, often shared among family and friends. Over the years, Phở has gained international fame, with countless variations emerging globally, reflecting local tastes and ingredients.

Get a large 20-quart pot and fill it with beef bones, beef shank, beef brisket, and beef ribs from Costco.
Fill the pot with water and turn the heat on to par boil the beef for 5 to 10 minutes to remove impurities.
While waiting, prepare the aromatics by slicing 2 large onions and 2 pieces of ginger in half and charring them on an open fire, air fryer, or broiler.
After 10 minutes of boiling, rinse the beef under cold water to scrub off any residue and bone fragments.
Toast the F spice bag on a dry stove for 3 to 5 minutes until it crackles and smokes, then add the spices into the bag and tie it up.
In a clean stock pot, add the beef bones, charred onions, charred ginger, about 3 golf ball sizes of rock sugar, and salt.
Fill the pot with water and bring it to a boil, then reduce the heat and simmer uncovered for at least 7 hours, scooping off foam that rises to the top.
After 2 hours of simmering, remove the beef shank, beef brisket, and beef ribs and place them into an ice bath to prevent discoloration.
After 8 hours of simmering, remove the spice bag and discard it, along with the onion, ginger slices, and beef bones.
Pour the broth through a fine strainer to remove solids and let it sit overnight to harden the fat on top for easier removal.
Taste the broth and adjust seasoning with fish sauce and chicken bouillon as needed.
