1

Chop a sweet onion into big chunks.

2

Use a chopper to finely mince the onion.

3

Put the minced onions into a small bowl.

4

Add the minced onions to a pan with a pinch of salt and fresh cracked black pepper.

5

Caramelize the onions until they are a nice dark golden color.

6

In a separate bowl, prepare the garlicky mayo by adding the zest of one lime and the juice of half a lime.

7

Minced one clove of garlic and add it to the mayo mixture.

8

Once the onions are caramelized, turn off the heat and set them aside to cool.

9

Add a little bit of the caramelized onions to the mayo mixture along with a tiny pinch of salt, fresh cracked black pepper, and ground cumin. Mix well and set aside.

10

Drain the juice from two cans of 4 oz Hatch green chilies using a strainer.

11

In a bowl, add a couple of pounds of 80/20 ground beef.

12

Add Worcestershire sauce, kosher salt, fresh cracked black pepper, cayenne pepper, and ground cumin to the beef.

13

Add all of the caramelized onions and the diced Hatch green chilies to the beef mixture.

14

Use your hands to blend everything together until well mixed.

15

Form the mixture into burger patties, making them as thick or thin as desired, and poke a well in the top to prevent mounding while grilling.

16

Place the patties on a hot grill.

17

Butter one side of the burger buns and place them on the grill as the burgers finish cooking.

18

Flip the burgers and add slices of pepper jack cheese on top.

19

Place the buns on the grill, avoiding direct flame, to get a nice warm crispy texture.

20

Spread the prepared mayo on the buttered buns.

21

Add a burger patty on top of the mayo.

22

Top with red onion, heirloom tomato, and butter lettuce.

23

Add more mayo to the top bun and optionally garnish with pickles and olives.
