African Beignets

Originating from various West African countries, African Beignets, also known as Bofrot, are a beloved street food often enjoyed during celebrations and gatherings. These sweet, fluffy doughnuts are typically served warm and dusted with powdered sugar, symbolizing joy and festivity. Today, they have gained popularity beyond Africa, with variations appearing in bakeries and homes around the world, showcasing their universal appeal.

Honey offers natural sweetness with a distinct flavor.
Put some of the flour in a large bowl.
Add the baking powder. Mix.
Add some salt.
Break the eggs in. Combine.
Add the milk gradually. Combine.
Add the vanilla, nutmeg, and orange blossom water. Stir.
Add more flour if necessary. Keep stirring.
Cover the bowl with a towel or plastic wrap. Let rest for a minimum of 45 minutes.
Heat the oil. It shouldn’t be too hot or else the one side won’t cook.
Use 2 large spoons to scoop up the batter and gently push into the oil. Leave space between the fritters.
Some will turn by themselves. Turn the ones that are brown on one side.
Keep cooking on medium heat. Let cook gently until nice and golden.
Gently remove and put on a paper towel layered pan.
