Mix together 1 and 1/2 cups all-purpose flour, 1 teaspoon baking soda, and 1/2 teaspoon salt in a bowl and set aside.

Melt 1/2 cup (113 g) unsalted butter and add it to a mixing bowl.

Add 3/4 cup light brown sugar to the melted butter and whisk until dissolved.

Add 2 room temperature eggs to the mixture and whisk again.

Add 2 teaspoons vanilla extract and 1/2 cup sour cream to the bowl and mix until combined.

Mash 3 ripe bananas until smooth, yielding about 1 and 1/4 cups or 300 g, and add to the wet mixture.

Combine the dry ingredients with the wet ingredients, mixing just until combined.

Chop 3/4 cup walnuts and fold them into the batter, reserving 1/4 cup for topping.

Grease an OXO loaf pan with butter and pour the batter into the pan, smoothing it out.

Sprinkle the reserved walnuts on top of the batter.

Bake in a preheated oven at 350°F for about 1 hour to 1 hour and 10 minutes, checking at 55-60 minutes with a toothpick to see if it's done.
