Begin by creaming the butter and sugar with a hand mixer on high for 4 to 5 minutes until light and fluffy.

Add the eggs to the mixture and mix well until thoroughly incorporated.

Add the vanilla extract and small chunks of ripe bananas directly into the mix, mixing on high until well incorporated (a couple of minutes).

Add sour cream to the mixture and incorporate it well.

Add salt, baking soda, and flour into the mixture with the mixer on low, mixing until just incorporated to avoid overmixing.

If using, add walnuts and chocolate chips at this point and incorporate them by hand.

Prepare a 9 by 5 by 3 inch loaf pan by greasing the bottom and sides and lining with parchment paper.

Preheat the oven to 350°F (175°C) and bake the pan in the center rack for about 1 hour, checking at 40 minutes and then every 10 minutes.
