Preheat the oven to 180°C (350°F).
In a mixing bowl, combine all-purpose flour, ground almonds, and salt.
In a separate bowl, cream together unsalted butter and powdered sugar until light and fluffy.
Add egg yolks and vanilla extract to the butter mixture, mixing until well combined.
Gradually add the flour mixture to the butter mixture, stirring until a dough forms.
Divide the dough into small pieces and shape each piece into a crescent.
Place the crescents on a baking sheet lined with parchment paper.
Bake in the preheated oven for 10-12 minutes, until lightly golden.
Remove from the oven and let cool slightly on the baking sheet.
While still warm, roll the cookies in vanilla sugar and let cool completely on a wire rack.
