Mix together flour, butter, ground almonds, and caster sugar in a bowl.
Use a hand mixer to mix until you get little lumps of butter and flour.
Knead the dough with your hands until it gets a smooth texture.
Cover the dough with plastic wrap and refrigerate for about 15 to 20 minutes, or overnight if needed.
If refrigerated overnight, let the dough sit at room temperature for a few minutes before kneading again.
Take a piece of dough and roll it into a stick, then shape it into a crescent moon.
Place the shaped cookies onto a baking tray.
Preheat the oven to 175 degrees Celsius (347 degrees Fahrenheit).
Bake the cookies for about 20 minutes.
Take the cookies out of the oven and sprinkle a mixture of vanilla sugar and powdered sugar on top.
