Shred 2-3 onions in a mini food processor until they turn into a paste.
Drain 70-80% of the liquid from the onions using a nut milk bag or cheesecloth.
Add the drained onions back to the mixture until it feels moist but not soaking wet.
In a large bowl, add 1.5 kg of lamb mince and 160 g of strained onion pieces.
Chop 25 g of parsley and add it to the bowl.
Add 3 teaspoons of salt, 2.5 teaspoons of black pepper, and 0.5 teaspoon of cayenne pepper to the mixture.
Knead the mixture by hand for 4-5 minutes until it becomes sticky and well combined.
Refrigerate the mixture for at least 1 hour to cool it down.
Prepare a tahini sauce by mixing 75 g of yogurt, 50 g of tahini paste, 20 ml of lemon juice, and 50 ml of water in a bowl.
Season the tahini sauce with 1/4 teaspoon each of salt, black pepper, ground cumin, and cayenne chili powder, then mix until smooth.
Shape the meat mixture around flat kebab skewers, ensuring even distribution.
Cook the skewers on the grill until browned and cooked through.
