1

Melt 2 tablespoons of butter in a pan.

2

Add canned peaches with all the juice to the pan.

3

If desired, drain about 1/4 of the juice from the peaches.

4

Add 1/4 cup brown sugar and spices (cinnamon, nutmeg, pinch of salt) to the peaches.

5

Add freshly squeezed lemon juice to the mixture.

6

Let the mixture cook through for a while.

7

Dissolve 2 teaspoons of flour in water and add to the peach mixture to thicken it.

8

Melt the remaining 2 tablespoons of butter and grease the 8x8 baking dish with it.

9

Press one of the pie crusts into the greased baking dish.

10

Cut the second pie crust into strips about one inch wide to create a lattice design on top.

11

Lay the strips across the top of the cobbler in a lattice pattern, trimming as necessary.

12

Brush the top crust with the remaining melted butter.

13

Optionally, sprinkle about 1 tablespoon of cinnamon sugar on top of the crust.

14

Bake at 350°F for about 50 minutes until the top is golden and bubbly.
