Add the canned peaches including the juice to a pot over medium heat.
Add 1.5 cups of sugar, 1 tablespoon of nutmeg, and 1 tablespoon of lemon juice to the pot.
Add 0.5 stick of butter to the mixture.
Add 2 tablespoons of vanilla to the pot.
(Optional) Add 0.25 cup of evaporated milk to the pot (the creator forgot to add this but recommends it).
Stir the mixture and let it come to a low boil.
Cook the mixture for about 10 to 15 minutes to soften the peaches.
Taste the filling and adjust sweetness if necessary.
In a separate dish, mix 2 tablespoons of corn starch with 1-2 tablespoons of water until well combined.
Gradually add the corn starch mixture to the filling to thicken it, adjusting to desired thickness.
Prepare a baking dish by lightly spraying it with Baker's Joy.
Lay one pie crust in the baking dish without pre-baking it.
Add the filling to the crust using a cup, reserving some juice to prevent spills.
Cover the filling with a second layer of pie crust.
Sprinkle a generous portion of sugar and optional nutmeg over the top crust.
Preheat the oven to 350°F (175°C).
Bake the cobbler for 45 to 60 minutes, depending on your oven.
Allow the cobbler to rest for 15 to 20 minutes before serving.
