Cut the potatoes into thin wedges (500 grams, about 1 pound).
Boil the potatoes in salted water for about 20 minutes until they start to soften.
Remove the silver skin or excess fat from 2 pieces of pork tenderloin and cut them into thicker pieces.
Place the tenderloin pieces into a bowl for seasoning.
Add 4 tablespoons of olive oil, dried thyme, dried rosemary, 2 teaspoons of red paprika, 1-2 tablespoons of mustard, 2-3 tablespoons of soy sauce, 2 cloves of crushed garlic, 1 teaspoon of salt, and a touch of black pepper to the bowl.
Mix everything together properly and let marinate while preparing the rest of the ingredients.
Cut a large red onion into 8 pieces and separate the layers with your hands.
Cut the red bell pepper and yellow bell pepper into bite-sized chunks similar to the onion pieces.
Slice smoked sausage into thin pieces and bacon into 4-5 pieces per skewer.
Thread the vegetables, pork tenderloin, smoked sausage, and bacon onto wooden or metal skewers, starting with bell pepper, then tenderloin, onion, and bacon, maintaining a balanced ratio.
Grease a sheet pan with olive oil to prevent sticking, and place the skewers on the pan with enough space for the potatoes.
Season the potato wedges with olive oil, salt, and black pepper, and place them on the sheet pan with the skewers.
Cover the sheet pan with foil and bake in the oven at 220 degrees Celsius (450 degrees Fahrenheit) for about 25 minutes.
While the skewers and potatoes bake, prepare the salad by cutting a large cucumber, red radishes, and cherry tomatoes into pieces and placing them in a bowl.
Add 2-3 tablespoons of olive oil, salt, black pepper, and lime juice to the salad ingredients and mix well.
For a more intense flavor, mix 1 cup of sour cream with 1-2 teaspoons of sugar and some lime juice, then pour over the salad and mix again.
After 25 minutes, remove the foil from the sheet pan and continue baking for about 25 more minutes, flipping the skewers after 10-15 minutes for even cooking.
Once the potatoes and meat are golden brown, serve by placing the skewer in the middle of a plate with potatoes on the side.
