Cut 2 cloves of garlic and peel them.

Chop about 1/2 cup of onion.

Turn on the pot to medium-low heat.

Add about 3 tablespoons of olive oil to the pot to cover the bottom.

Transfer the chopped onion into the pot once the oil is heated.

Stir the onions to coat them in oil and prevent burning.

Slice the garlic and add it to the pot with the onions.

Cook the onions and garlic until the onions are translucent, about a couple of minutes.

Add 1/4 cup of tomato sauce to the pot.

Crush a can of whole San Marzano tomatoes by hand.

Pour the crushed tomatoes into the pot with the onions and garlic.

Add tomato paste to the pot (optional).

Stir the tomato paste into the sauce.

Turn the heat up to medium-high to bring the sauce to a boil.

Add salt to taste, starting with a generous four-finger pinch.

Simmer the sauce for about 10 minutes until thickened.

Taste the sauce and adjust seasoning if necessary, adding sugar to balance acidity if needed.

Blend the sauce with an immersion blender or food processor if a thinner consistency is desired.
