Preheat the oven to 425°F (220°C).
Add 1/4 cup of butter to a 9x5 loaf pan and place it in the cold oven to melt as the oven preheats.
In a blender, add 2 eggs and blend.
Add 1/2 cup of 2% milk, a pinch of salt, 1/2 teaspoon of vanilla extract, and 1/2 cup of flour to the blender and blend until smooth.
Pour the batter into the loaf pan over the melted butter.
Bake in the oven for 20-25 minutes until puffed and golden brown.
For the cinnamon apple version, slice a Granny Smith apple and soak in a bowl of water with about 1/2 teaspoon of salt to prevent browning.
Dry the apple slices and lay them in the bottom of the baking dish.
Prepare the batter again using 2 eggs, 1/2 cup of 2% milk, a pinch of salt, 1/2 teaspoon of vanilla extract, and 1/2 cup of flour, and blend.
Pour the batter over the apple slices in the baking dish.
Mix 2 tablespoons of sugar with 1/2 teaspoon of cinnamon and sprinkle most of it on top of the batter, saving some for later.
Bake in the oven at 425°F for 20-25 minutes.
Remove from the oven and sprinkle with reserved cinnamon sugar, powdered sugar, and fresh squeezed lemon juice before serving.
