Bring 1 gallon of water to a simmer in a large pot.

In a medium bowl, add 1 cup of all-purpose flour, 1/2 teaspoon of salt, 1/2 teaspoon of ground nutmeg, and a pinch of freshly ground white pepper. Whisk to combine.

In a small bowl, beat 2 eggs well.

Alternating with 1/4 cup of milk, add the eggs to the flour mixture and whisk until smooth.

Press the dough through a spaetzle maker into the simmering water a little at a time. If you don't have a spaetzle maker, you can use a large-holed colander, box grater, potato ricer, or a plastic bag with holes punched in it.

Cook the dumplings in the simmering water for 5 to 8 minutes.

Drain the dumplings and sauté them in 2 tablespoons of melted butter until golden brown on the outside, about 4 to 5 minutes.

Spoon the spaetzle onto a serving dish and sprinkle with 2 tablespoons of chopped fresh parsley.
