Heat oil in the pan. Add more oil if needed.

Add shrimp paste (3 times) and let it melt and dissolve.

Add chopped onion and mix well.

Add 3 large cloves of garlic and mix everything together.

Add galangal, 2 bay leaves, and whole pepper (do not break) and mix well.

Add grated ginger and mix everything together.

Add more oil if needed, then add 2 tablespoons of thick ketap (sweet soy sauce).

Add salty soy sauce (ABC or Manis brand) and stir well.

Add cooked basmati rice and mix thoroughly.

Optionally add large prawns and mix.

Add five spices (1 teaspoon) and mix.

Add paprika and sereh (lemongrass) and mix.

Adjust the color with more ketchup if needed.

Add chopped celery, reserving some for garnish, and mix.

Check salt content and adjust with sea salt if necessary.

Fry for another 10 minutes until crispy, but not too hard.

Remove galangal and bay leaves before serving.

Plate the nasi by pressing it into a bowl and turning it over onto the plate.
