Put water to boil in a pot.
Cut 2 medium sized potatoes into small chunks.
Cook the potatoes until tender to make mashed potatoes.
Drain the water out of the tuna using a strainer and spoon.
Transfer the drained tuna to a bowl.
Finely chop spring onion and 2 cloves of garlic.
Saute the chopped onions and garlic in a pan over medium-high heat until translucent.
Transfer the sautéed onions and garlic into the bowl with tuna and mix quickly.
Drain the cooked potatoes and prepare the mashed potatoes by adding 1 tablespoon of butter, 1/2 teaspoon of salt, 1/2 teaspoon of black pepper, and 1/2 teaspoon of all-purpose seasoning, mixing until pasty.
While the mashed potatoes are still hot, add them to the tuna mixture along with 1 egg and combine everything.
Heat up some pure canola oil in a frying pan for frying the croquettes.
Pour Italian breadcrumbs onto a large plate.
Roll the tuna mixture into balls of desired size, dip them into the breadcrumbs, and then into the frying pan.
Fry the croquettes evenly for about 3 to 5 minutes until golden brown.
Transfer the fried croquettes to a bowl with a napkin to soak up excess oil.
Serve the croquettes with any dipping sauce of your choice.
