Chop a couple of onions and some bell peppers, then set them aside.

Trim off any visible fat from 1 kilo of pork loin and chop it up.

Heat a large ovenproof casserole dish or Dutch oven over medium heat and add olive oil.

Fry the chopped veggies for a few minutes until they get some color and soften up.

Add minced garlic and cook for an additional 30 seconds.

Pour in red wine and scrape off any bits stuck to the bottom of the pan to add flavor.

Add 3 teaspoons of dried oregano, 1 teaspoon of cumin, 1/2 teaspoon of salt, and 2 bay leaves to the pot.

Add one can of chopped tomatoes to the mixture.

Add the chopped pork loin to the pot without browning it beforehand.

Mix everything together and cover the pot with a lid.

Place the pot in the oven at 160°C for around 3 hours.

After 3 hours, remove the pot from the oven and garnish with fresh basil leaves or parsley before serving.
