Apple Cinnamon Rolls

1/4 cup granulated sugar
1/2 tsp salt
1 packet (2 1/4 tsp) active dry yeast
1/2 cup milk
1/4 cup unsalted butter
1 large egg
1 tsp vanilla extract
1 tsp ground cinnamon
1 cup peeled and diced apples
1/4 cup brown sugar
1/4 cup chopped walnuts (optional)
1/2 cup powdered sugar (for icing)
1-2 tbsp milk (for icing)

In a small saucepan, heat the milk and butter over low heat until warm and butter is melted. Remove from heat and let cool slightly.

In a large mixing bowl, combine the flour, granulated sugar, salt, and yeast.

Add the warm milk mixture, egg, and vanilla extract to the dry ingredients. Mix until a dough forms.

Knead the dough on a floured surface for about 5-7 minutes until smooth and elastic.

Place the dough in a greased bowl, cover with a cloth, and let it rise in a warm place for about 1 hour or until doubled in size.

Once risen, roll the dough out into a rectangle about 1/4 inch thick.

Spread the diced apples evenly over the dough, then sprinkle with brown sugar, cinnamon, and walnuts if using.
