Apple Cinnamon Rolls
Pour 2 packages of active dry yeast into 1/4 cup of tepid warm water and add 1/2 teaspoon of sugar, then mix.
Pour 1 cup of hot water into a large mixing bowl, then add 1 teaspoon of salt, 1/2 cup of butter, and 1/2 cup of sugar. Mix together and let sit until the butter is melted, then let cool.
Add 3 lightly beaten eggs and the yeast mixture to the cooled mixture, then mix.
Gradually mix in 4 1/2 cups of flour until completely combined. The dough will be very sticky; do not worry.
Cover the dough and let it rise until doubled in size.
After the dough has risen, punch it down with your hand, cover it with a towel, and place it in the refrigerator for a few hours.
Once the dough is chilled, take it out of the bowl and sprinkle with a little flour. Knead the dough a few times until smooth.
Roll the dough out into a rectangle using a rolling pin.
Spread 1/2 cup of soft butter over the dough.
Put 1 can of apple pie filling into a food processor and process until smooth, then spread the apple filling over the dough.
Mix together 1/2 cup brown sugar, 1/2 cup white sugar, and 1 tablespoon cinnamon, then sprinkle over the dough.
Starting at the edge closest to you, roll the dough tightly. If your fingers get too sticky, add a little flour to your fingers and continue rolling until fully rolled up.
To cut the individual rolls, take a long piece of thread, slide it underneath the roll, and cut into 1 1/2 to 2 inch thick slices.
Place the rolls in a greased cake pan, cover with a towel, and let them rise until doubled in size.
Bake at 350 degrees for 25 to 30 minutes.
Once done, take them out and let them cool. Frost with frosting if desired.
