Apple Cinnamon Rolls

1/2 tsp salt
1 packet (2 1/4 tsp) active dry yeast
1/2 cup warm milk
1/4 cup unsalted butter
1 large room temperature egg
1 tsp vanilla extract
1 cup peeled and diced apples
1/4 cup brown sugar
1 tsp ground cinnamon
1/4 tsp ground nutmeg
1/4 tsp ground ginger
1/2 cup powdered sugar

In a large bowl, add flour, sugar, and yeast, and mix until combined.

Add cold butter cut into small pieces and rub it into the mixture using fingers until evenly distributed.

Add room temperature eggs, salt, and warm milk, and mix until they start to come together.

Use hands to bring the mixture together into a ball.

Turn the dough out onto a lightly floured work surface and knead for five minutes until smooth and elastic.

Grease the bowl used for the dough, pull and tuck the edges of the dough underneath to form a smooth top, and place it back in the bowl.

Wrap the bowl tightly in plastic wrap and let it rise in a warm place for one to two hours until doubled in size.

Prepare the apples by washing, drying, peeling, coring, and chopping them into small pieces.

Place chopped apples in a bowl filled with ice water and sliced lemons to prevent browning, and let sit for a few minutes.

Drain the water and remove lemon slices and ice cubes, then pat apples dry with paper towels and set aside.

In a small bowl, mix brown sugar, cinnamon, nutmeg (optional), ginger (optional), and salt until combined, then set aside.

Once the dough has doubled, turn it out onto a lightly floured work surface and roll it out to about 15 to 18 inches long and 10 inches wide.

Spread softened butter over the rolled-out dough, sprinkle cinnamon sugar mixture evenly, and add chopped apples.

Cut the log into 12 or 15 pieces using dental floss or a sharp knife.

If rising in the fridge, let rolls come to room temperature for an hour before baking; if they didn't rise much, leave for two hours.

In a small bowl, mix powdered sugar, milk, and vanilla extract for the glaze until combined; add more milk for a thinner consistency if desired.
