Cut off the edges of 5 slices of fresh bread and cut into small pieces.
Toast the bread pieces in a pan with 2-3 teaspoons of oil on medium high until golden brown.
Blanch 10-15 red chilies, cool them, and grind to a fine paste.
In a heated pan, add 3 teaspoons of oil, 1 tablespoon of finely chopped garlic, and 1 tablespoon of finely chopped ginger.
Add 2 chopped green chilies, 1 medium sized finely chopped onion, and 1 large finely chopped capsicum; sauté for about 5 minutes.
Season with 1/4 teaspoon of salt and 1/2 teaspoon of pepper.
Add 1 teaspoon of vinegar, 2 teaspoons of soy sauce, and 1 tablespoon of freshly ground chili paste; mix well.
Add 2 tablespoons of tomato ketchup and 1 tablespoon of chopped spring onion whites; mix everything together.
Add 1/2 cup of water and mix.
Make a corn flour slurry by mixing 1.5 teaspoons of corn flour with 1/4 cup of water; add to the mixture to thicken it.
Add the toasted bread pieces and mix until coated with the chili mixture.
Garnish with chopped spring onion greens and chopped coriander leaves; serve immediately.
