Nutritional yeast adds a cheesy flavor with fewer calories.
Wash the curly kale thoroughly.
Chop the kale into one-inch pieces, removing the thick stems and composting them.
Crush and slice 2 garlic cloves into thin slices.
Heat olive oil in a Cuisinart 5 1⁄2 quart saucepan over medium heat until warm.
Add the sliced garlic to the pan, keeping it off to the side instead of sautéing it immediately.
Add a little bit of water to the pan to create steam, then increase the temperature briefly before lowering it again.
Add the chopped kale to the pan and stir to combine with the garlic and olive oil.
Cook the kale for less than 10 minutes until it is deep green and wilted, stirring occasionally to ensure even cooking.
Serve the sautéed kale with some of the garlic pieces on top.
