Start by laying out all ingredients: 1 pound of clean and chopped kale, 1 tablespoon of extra virgin olive oil, 2 cloves of minced garlic, 1/4 teaspoon of crushed red pepper, 1/4 teaspoon of salt, 2 to 3 teaspoons of sherry vinegar, and 1/2 cup of water.

Turn on medium heat and add 1 tablespoon of extra virgin olive oil to a large pot with a lid or a Dutch oven.

Add the kale to the pot and toss it until it becomes bright green, about 1 minute.

Add 1/2 cup of water to the pot and reduce the heat to medium-low. Cover and cook, stirring occasionally, for about 12 to 15 minutes until the kale is tender.

After 12 minutes, check the kale. It should be beautifully wilted and dark green.

Push the kale to one side of the pot to create space. Add the remaining olive oil to the empty side of the pot.

Add the minced garlic and crushed red pepper to the oil and stir. Let it cook for 30 seconds to 1 minute until fragrant.

Turn off the heat and toss the kale with the garlic and red pepper mixture.

Add 2 to 3 teaspoons of sherry vinegar to the kale and toss again to combine.

Season with 1/4 teaspoon of salt and plate the kale for serving.
