Scrub 4 to 6 medium russet potatoes, leaving the skins on.

Slice the potatoes into 1/4 inch circles using a mandolin or knife.

Prepare a large bowl of water to soak the sliced potatoes.

In a medium skillet over medium-high heat, add 1 tablespoon of cooking oil.

Sauté 1 diced yellow onion in the skillet until softened and slightly colored, seasoning with salt and black pepper.

Add 1 pound of ground beef to the skillet, breaking it up as it cooks until browned.
