1

Cut the block of firm tofu into pieces.

2

Press the tofu pieces in between a towel with a cutting board and a heavy pan on top for about 30 minutes.

3

Prepare the cornstarch mixture while the tofu is pressing.

4

Put the pressed tofu pieces in a bowl and coat them with the cornstarch mixture, mixing carefully until all pieces are coated.

5

Add a small layer of vegetable oil to a pan and heat it on medium heat until hot.

6

Test the oil by placing a piece of tofu in it; if bubbles form, the oil is hot enough.

7

Carefully add all the tofu pieces to the pan and fry them for about 5 minutes on each side until super crispy, totaling about 10 minutes.

8

Remove the crispy tofu from the oil and let it drain on kitchen paper towels.

9

In a separate pan, cook minced garlic and red chili pepper in oil for about 2 minutes.

10

Add the remaining sauce ingredients (except cornstarch) to the pan and bring to a boil.

11

Mix cornstarch with water to prevent lumps, then add it to the boiling sauce and stir immediately to combine.

12

If lumps form, whisk the sauce until smooth and cook for about a minute to thicken.

13

Add the crispy tofu to the sauce and mix immediately before serving to maintain crispiness.
