Healthy Pumpkin Pie Oatmeal (Overnight Crock Pot Recipe!)

Spray the crock pot with non-stick cooking spray.

Add 3 cups of milk (or coconut milk, almond milk, 2%) to the crock pot.

Add 15 oz (about 2 cups) of pumpkin puree to the milk.

Add 1.5 teaspoons of vanilla and a dash of salt to taste.

Add 1.5 teaspoons of cinnamon and 1.5 teaspoons of pumpkin pie seasoning.

Add 1/4 cup of honey and 3 tablespoons of syrup for sweetness.

Mix all the ingredients together thoroughly until well combined.

Add 1.25 cups of steel cut oats to the mixture and mix well.

Turn the crock pot on low and cover it.

After cooking overnight (about 7 hours), turn off the crock pot and mix the oatmeal well before serving.

Serve with toppings of walnuts and dried cranberries.
