Prepare the roast by using a corn silver side weighing 1.2 kilos (about 2.5 lb).

Make a marinade with 1/3 cup avocado oil, 1 tablespoon crushed garlic, 2 tablespoons Montreal seasoning, 2 tablespoons dried mixed herbs, and 1.5 teaspoons salt. Mix well.

Cover the roast with the marinade and place it in a pan with a rack to catch the meat drippings while roasting.

Roast the beef in the oven for a few hours, basting halfway through with leftover marinade.

In a separate pan, melt 1 tablespoon of butter over low heat.

Add the whole carton of egg whites to the pan and let it cook slowly without stirring for about 20 minutes until it forms a white base.

After 20 minutes, flip the egg whites and cook for an additional 5 minutes until ready. Turn off the heat and let cool.

Transfer the cooled egg whites to a blender or mix by hand until combined, yielding about 263 grams of cooked egg whites.

Add 2 tablespoons of heavy cream, 1 tablespoon of gelatine, and 1/2 cup of stock to the blender with the egg whites and blend until smooth with no visible flakes of egg white.

To store, fill a mini muffin or cupcake pan with the gravy mixture and freeze until ready to use.

Once the beef roast is done, set it aside to rest and collect the meat drippings in the pan.

Add a portion of the concentrated gravy to the meat drippings and pour in a little stock, adjusting thickness as desired.

Mix to combine over low to medium heat until thickened, adding more concentrated gravy if too thin or more stock if too thick.

Strain the gravy to remove any lumps before serving.
