3 lb chuck roast
1/2 teaspoon kosher salt
1 1/2 teaspoon coarsely ground black pepper
2 teaspoons vegetable oil
3 large cloves garlic
1 yellow onion
2 bell peppers
4 medium potatoes
4 medium carrots
2 cups beef broth
2 tablespoons Hungarian paprika
2 bay leaves
1 teaspoon caraway seeds

Cut 3 lb chuck roast into 1-inch pieces.

Season the meat with 1/2 teaspoon kosher salt and 1 1/2 teaspoon coarsely ground black pepper.

Heat 2 teaspoons vegetable oil in a cast iron skillet.

Sear the meat in the skillet until browned on all sides, then transfer to the crockpot.

Deglaze the skillet with a small amount of hot water to scrape up the browned bits, then add this to the crockpot.

Chop 1 yellow onion, 2 bell peppers, 4 medium potatoes, and 4 medium carrots, and add to the crockpot.

Add 3 large cloves of garlic, 2 cups beef broth, 2 tablespoons Hungarian paprika, 2 bay leaves, and 1 teaspoon caraway seeds to the crockpot.

Stir all ingredients in the crockpot to combine.
