1 medium onion, chopped
2 cloves garlic, minced
1 bell pepper, chopped
2 medium tomatoes, diced
4 cups vegetable broth
1 tsp cumin
1 tsp paprika
1/2 tsp black pepper
1/2 tsp salt
2 tbsp olive oil
1 cup corn (optional)
1/4 cup fresh cilantro, chopped (for garnish)

Heat olive oil in a large pot over medium heat.

Add chopped onion and garlic, sauté until translucent.

Stir in the bell pepper and cook for another 2-3 minutes.
