Measure out 1 cup of dry white beans (180 grams).

Transfer the beans into a colander and rinse them under cold running water, removing any broken beans or debris.

Transfer the drained beans into a large bowl and pour 4 cups of cold water over them (1 liter).

Leave the beans to soak for 8 to 16 hours to hydrate.

After at least 12 hours, drain the beans back into the colander and rinse them under cold running water again.

Grab a large stock pot and heat it over medium heat.

Add 2 tablespoons of extra virgin olive oil (30 milliliters) to the pot.

Finely dice half of an onion and roughly chop 4 cloves of garlic.

After heating the olive oil for a couple of minutes, add the diced onion and chopped garlic to the pot and mix continuously for about 3 minutes until the onion is translucent.

Add 1 teaspoon of sweet smoked Spanish paprika (2.30 grams) and mix quickly to avoid bitterness.

Add the drained white beans to the pot and mix well.

Pour in 5 cups of vegetable broth (1200 milliliters) and add 2 bay leaves.

Increase the heat to high and mix, waiting for the broth to come to a boil.

Once boiling, place the lid on the stock pot and lower the heat to low medium, simmering for about 1 hour until the beans are fully cooked.

After 1 hour, remove the lid and check that most of the broth has been absorbed, leaving a beautiful stew.

Season with sea salt and freshly cracked black pepper, mixing gently and cooking for another 1 to 2 minutes to incorporate the seasonings.

Remove the stock pot from the heat and serve the stew.
