0.5 tsp Fenugreek Seeds

1 tbsp Rice Flour
Chopped Coriander

Heat 2 cups of Water in a vessel.

Add 2 cups of chopped Bottle Gourd, 1 cup of Sweet Potato, 1 cup of Pumpkin, and 0.5 cup of Drumstick cut into 3 inch pieces and slit.

Add 4-5 chopped Green Chillies.

Cover the vessel with a lid and let the vegetables boil for about 10-15 minutes until they are cooked well.

Add 1 cup of Tamarind Pulp, Salt to taste, 0.25 tsp of Turmeric Powder, and 2 tbsp of Jaggery; mix everything well.

Let it cook for a few minutes to blend the flavors.

Prepare the tempering by heating 1 tbsp of Oil in a pan.

Add 1 tsp of Mustard Seeds, 0.5 tsp of Fenugreek Seeds, and 4-5 Red Chillies; roast until aromatic.

Pour the tempering into the Vegetable Stew.

Make a Rice Slurry by mixing 1 tbsp of Rice Flour with some Water; add this to the Stew while stirring continuously to avoid lumps.

Cook for another 4-5 minutes and sprinkle some Chopped Coriander on top before serving.
