Cincinnati-Style Chili

Cultural Context

Cincinnati-Style Chili is a unique regional dish that originated in Cincinnati, Ohio, in the early 20th century. It is characterized by its use of spices such as cinnamon and chocolate, which differentiate it from traditional chili con carne. Often served over spaghetti and topped with cheese, it reflects the city's diverse cultural influences, particularly from Greek immigrants. This dish is a staple in local diners and has gained popularity beyond its origins, becoming a beloved comfort food.

3

Incorporate 1 tbsp of extra virgin olive oil into the dough mixture.

4

Use a spatula to combine the ingredients until just combined.

5

Transfer the dough to a work surface and knead until silky, about 10 minutes.

6

Wrap the dough in plastic wrap and let it rest for at least 30 minutes.

7

Combine 5 oz of Italian double zero flour, 1 tbsp of salt, 1 tbsp of sugar, and 1 tbsp of baking powder in a bowl for the oyster crackers.

8

10

Heat oil in a pan and brown 1 lb of ground beef with 1 diced onion.

11

Add 3 diced cloves of garlic after a few minutes to prevent burning.

12

Season the meat mixture with pepper and salt.

Add chili powder, Cayenne pepper, allspice, cinnamon, cumin, and 1 bay leaf, and cook until aromatic, about 1-2 minutes.

14
