In a separate bowl, whip cream until soft peaks form, then fold in gelatin mixture gently.
Combine whipped egg whites with whipped cream, folding carefully to maintain volume.
Add vanilla extract, lemon juice, and salt, mixing until just combined.
Pour the mixture into the prepared baking dish, smoothing the top with a spatula.
Chill in the refrigerator for at least 4 hours, or until set completely.
Once set, dust the top with powdered sugar or cocoa powder before serving.
Cut into squares and serve with fruit puree or chocolate sauce if desired.
