Turkey has long been a centerpiece in Azerbaijani celebrations, particularly during Novruz, the Persian New Year. Traditionally, families gather to enjoy a feast that symbolizes abundance and togetherness. The preparation of a large roasted turkey reflects hospitality and the importance of sharing meals with loved ones. Today, variations of this dish can be found across the globe, often incorporating local spices and cooking methods, but the essence of gathering around a beautifully roasted turkey remains universal.

Preheat the oven to 350°F (175°C).
Prepare the turkey by removing the giblets and patting it dry with paper towels.

Stuff the cavity with garlic, onion, thyme, rosemary, and lemon slices.
Place chopped carrots, celery, and potatoes in the roasting pan around the turkey.
Pour chicken broth into the bottom of the roasting pan to keep the turkey moist.
Cover the turkey loosely with aluminum foil to prevent over-browning.
Roast the turkey in the preheated oven for about 2 to 3 hours, basting occasionally with pan juices.
Remove the foil for the last 30 minutes to allow the skin to crisp up.
Check the internal temperature of the turkey, ensuring it reaches at least 165°F (74°C).
Once done, remove the turkey from the oven and let it rest for 20-30 minutes before carving.
Garnish with fresh parsley before serving.
