Preheat oven to 425 degrees.
Prepare individual gratin dishes by placing 1 tablespoon of butter in each.
For the savory batter, whisk together 3 extra-large eggs in a measuring cup.
Add 1/4 teaspoon black pepper and 1/4 teaspoon kosher salt to the eggs.
Pour in 3/4 cup whole milk and mix well.
Strip 3/4 teaspoon fresh thyme leaves from the stems and add to the mixture.
Add 3/4 cup all-purpose flour to the egg mixture and whisk until smooth.
Dice 1 Yukon Gold potato into half-inch pieces without peeling.
Finely mince 2 cloves of garlic and 1 large shallot.
In a bowl, combine the diced potato, minced garlic, minced shallot, 3 tablespoons olive oil, and some green onions.
